  • 5 sticks unsalted butter, divided

  • 2 cups granulated sugar, divided

  • 5 1/2 cups all purpose flour, divided

  • cup light brown sugar

  • tsp cardamom

  • 4 cups sliced ​​strawberries

  • tsp cinnamon

  • tsp lemon zest, plus 1 tsp juice (from 1 lemon)

  • 5 tablespoons cornstarch

  • 2 cups powdered sugar

  • 1 teaspoon vanilla bean paste

  • cup heavy cream


1) Preheat oven to 350 degree Fahrenheit. Using parchment paper, line one half sheet pan, leaving a 1-inch overhang on all sides.

2) For the crust, melt 4 sticks of butter in a medium saucepan over medium heat, scraping off and using a long-standing spoon to remove froth. Cook for another 2 to 3 minutes, or until the butter has darkened and a nutty aroma comes out.

3) Transfer the browned butter to the bowl of a stand mixer and refrigerate on an ice bath for 15 minutes or until it begins to harden.

4) A stand mixer fitted with the paddle attachment beats 1 cup sugar on medium-high speed until light and fluffy, about 2 minutes.

5) Add 4 cups flour and 14 teaspoons salt, and whisk on low speed for about 1 minute or until the dough is well blended and begins to come together.

6) Press the dough evenly into the prepared pan by hand. Bake for 15-20 minutes or until golden brown.

7) To make the topping, brown the remaining 112 sticks of butter in the same medium pot. Let the browned butter cool to room temperature. Combine remaining 112 cups all purpose flour, brown sugar, 1/3 cup granulated sugar, remaining 14 tsp salt and cardamom in a mixing basin. Fold in cold butter until small clumps form. Remove from equation. Clean the saucepan with a damp cloth.

8) To make the filling, combine the strawberries, cinnamon, lemon zest and juice in a saucepan and cook over medium heat, stirring occasionally, until the strawberries break down and the mixture comes to a boil.

9) Spread berry filling over cooked crust. Distribute the topping evenly over the filling, breaking up any large pieces with your hands. Preheat oven to 350°F and bake for 20 to 30 minutes or until golden brown.

10) To make glaze, whisk together powdered sugar, vanilla bean paste and heavy cream in a medium mixing basin while bars bake. Drizzle over bars.

11) Let cool for 1 hour before slicing.
